Glashoff Farms Walnut Pie

Makes 2 pies
INGREDIENTS
4 cups walnuts, halved or chopped (or both)
2 (9-inch) pie crusts (we love this recipe from Better Homes and Gardens, but substitute cold butter for the shortening)
8 eggs
2 cups dark Karo Syrup
2 cups brown sugar
1 cup walnut oil
2 teaspoons vanilla
1 teaspoon salt
PREPARATION
1. Preheat oven to 350°F. Put of half the walnuts in each of the pie shells and set aside.
2. Together in a mixing bowl, combine the eggs, Karo, brown sugar, walnut oil, vanilla, and salt. Using a hand mixer or a whisk, mix until well blended. Pour over the walnuts in the pie shells.
3. Bake for 40 to 50 minutes. Let chill, and then serve. We loved the outcome using our walnut oil. It was not super runny (it just had a caramely, nutty filling that was firm enough to slice but soft enough to seem like a syrup). So yummy! We hope you love it as much as we did!
