
Sorrel and Orange Salad with Cucumbers

Sorrel is a hardy perennial herb with a sour lemon flavor and is high in vitamin A. Feta would make an excellent substitution for the hard cheese in this recipe.
Serves 4
INGREDIENTS
Vinaigrette
1 small garlic clove, grated or finely chopped
1 tablespoon pomegranate vinegar, or red wine vinegar
3 tablespoons olive oil
Salt and pepper to taste
4 cups sorrel, torn into large pieces, or other salad greens
1 orange, peeled and sliced
2 Persian cucumbers, sliced
¼ cup grated hard cheese, such as Capricious (from Achadinha Cheese Company) or Parmesan
PREPARATION
To make the vinaigrette: In a small bowl, add the garlic and vinegar, then whisk in the olive oil. Add salt and pepper to taste.
To make the salad: Combine the sorrel, orange, and cucumbers in a large bowl. Pour the dressing over the salad; toss to coat. Sprinkle the cheese on top and serve.
