INGREDIENTS
Filling
5 ripe but firm peaches
1 pint of strawberries
5-6 large basil leaves torn into small pieces
⅓ cup brown sugar
2 teaspoons lemon juice
Topping
1 ½ cups flour
1 teaspoon baking powder
½ teaspoon baking soda
3 tablespoons sugar
Zest of 1 lemon
6 tablespoons butter
3 tablespoons mascarpone
~1 cup buttermilk
PREPARATION
To make the filling: Cut up peaches into 1-inch slices and slice the strawberries. Mix cut-up fruit and remaining filling ingredients together and place in an 8×8 baking pan.
To make the topping: Mix flour, baking powder, baking soda, sugar, and lemon zest in a bowl. Cut in butter and mascarpone until mixture is coarse with lumps the size of small peas. Add in just enough buttermilk so the dough is wet and starting to not hold together anymore and you can easily scoop portions with a spoon. Use a spoon to drop 9 equal rounds of dough over the filling. Bake in a 350 degree oven for 40-50 minutes, or until biscuits are golden brown on top and filling is bubbly.
